A side-hustle started in 2019 by our Founder, Olivia, took the Toronto charcuterie delivery landscape by storm during the summer of 2020. Olivia and her now-husband George resigned from their corporates careers in Sept 2020 to pursue their passions.

Founder
Olivia Petrou-Stanchev
Olivia Petrou is the Founder of Olive & Fig, where her love for beautiful, thoughtful food and creating memorable experiences comes to life in every product. With a deep passion for food, family and gathering, Olivia has transformed her vision for elevated entertaining into a go-to brand across the GTA.
From a young age and growing up in a large Greek family, Olivia was inspired by the joy of gathering people around a table full of delicious house-made food. She believes that food is more than sustenance—it is a way to connect, celebrate, and create lasting memories.
Before founding Olive & Fig, Olivia built a successful career in HR and executive recruitment, specializing in sourcing, selecting, and developing top talent. This experience allowed the development of a stellar team at Olive & Fig building a company culture rooted in creativity, collaboration, and excellence. What began as a weekend passion project in 2019 quickly evolved into a thriving business, as Olivia recognized the delivery demand for beautifully curated grazing experiences.
Beyond the kitchen, Olivia is known for her warmth, energy, and dedication to her team and clients. Every product created by Olive & Fig embodies her philosophy that thoughtful, beautiful food has the power to connect hearts, spark joy, and create lasting memories.

George Stanchev

George Stanchev is the Co-Founder of Olive & Fig, where his passion for culinary storytelling comes to life in every product. Having lived in five different countries, George’s international upbringing has given him a deep appreciation for diverse cultures, flavours, and traditions.
Before founding Olive & Fig, George held senior roles in financial services, but his true passion for culinary excellence grew in the background. George longed for a way to combine his love of food, entertaining, and meaningful connections with others. George's core belief is that food is more than a meal; it’s an experience and a story told with every bite.
At Olive & Fig, George’s focus spans strategy, finance, operations, and growth, but he’s equally involved in the creative. His focus is to ensure every offering reflects the care and attention to detail he values most.
Beyond the office and kitchen, George is a true food enthusiast. He loves exploring cuisines, discovering hidden culinary gems, and recreating dishes inspired by his global experiences.
Head of Culinary Operations
Jaynie Rovet
As Head of Culinary Operations at Olive & Fig, Jaynie brings a dynamic blend of creativity, precision and leadership to our kitchen—and to all the artisanal charcuterie and catering experiences we deliver.
Jaynie’s culinary journey is rooted in formal training and rich real-world experience. After earning her Culinary Management diploma and Red Seal Chef Certification from George Brown College, she refined her craft across progressive chef roles in the Greater Toronto Area. Her career includes senior chef positions at recognized venues such as Nordstrom and JOEY Restaurant Group culminating in her joining Olive & Fig in 2021 as Head Chef.
In her current role, Jaynie is responsible for all facets of our culinary vision and operations: from driving innovation to crafting seasonal menus and elevating every customer experience. Her passion for new flavour combinations, high standards and inventive presentation reflects the very heart of Olive & Fig’s commitment to outstanding food delivery and catering.
Head Chef
Andrew Sloley
In the role of Head Chef, Andrew brings a wealth of international experience and refined culinary expertise to Olive & Fig, ensuring our kitchen under his guidance runs smoothly while delivering consistently elevated culinary experiences.
His career spans prestigious kitchens and luxury hospitality settings across the world. Andrew honed his craft as a Tournant Chef with Holland America Line in the USA, before advancing to Senior Sous Chef at Sandals Montego Bay in Jamaica and later serving as Corporate Chef for Nestlé Jamaica Limited in Kingston. His journey continued as Executive Sous Chef at Sandals Grande Antigua Resort and Spa in Antigua and Barbuda, followed by Chef de Partie at Cluny’s Bistro and Boulangerie, culminating in his role as Sous Chef at the renowned Bisha Hotel in Toronto.
His educational background further reinforces his leadership and operational expertise. Andrew earned a BSc in Hospitality & Tourism Management from the University of Technology Jamaica and University of the West Indies. He later completed a MSc in Leadership at Walden University followed by a Post-Graduate Certificate in HR Management from George Brown College. He is currently pursuing his Red Seal Certification.
His global experience, paired with his passion for culinary excellence, ensures that every client experience is executed flawlessly with creativity, heart, and precision.
Senior Sous Chef
Andre Esteban
Andre Esteban is a highly skilled and passionate Senior Sous Chef at Olive & Fig, bringing over a decade of experience in high-end restaurants and catering kitchens. Known for his proficiency in fast-paced, demanding environments, Andre combines technical expertise with creative flair, ensuring every dish meets the highest standards of quality, presentation, and taste.
Before joining Olive & Fig, Andre served as Sous Chef at Luma and Sofia Yorkville, where he developed new recipes, modernized workflows, and fostered strong supplier relationships to ensure the finest ingredients. Most recently, as Sous Chef at Yorkshire Pudding Inc., he managed catering for large events, created customized menus based on client needs, and collaborated closely with event planners to deliver seamless culinary experiences—all while balancing budgets and maintaining impeccable quality standards.
Andre holds a Culinary Management diploma from Humber College and is Food Handler Certified. His expertise spans butchery, pastry, menu development, cost control, and team leadership, making him an indispensable part of Olive & Fig’s kitchen operations. With his combination of technical mastery and creative innovation, Andre ensures that every dish leaving the Olive & Fig kitchen reflects both the care and passion that define our culinary offerings.
Senior Grazing Stylist
Andriana Popil
Andriana Popil joined Olive & Fig in January 2023, arriving in Canada as
a refugee from Ukraine with no prior kitchen experience. She very quickly became a key member of our culinary team.
Andriana’s journey is a testament to resilience and passion. She has grown into a vital part of Olive & Fig, contributing not only her technical expertise but also her signature flair for beautiful, balanced displays. Her story reminds us that talent and dedication can flourish under the right guidance and she continues to elevate every product with skill and heart.
Today, Andriana is a Senior Grazing Stylist, confidently creating stunning charcuterie arrangements and training new staff with patience and care. Her loyalty, punctuality, and commitment to excellence make her a trusted and inspiring presence in our kitchen.
